Vinification red wines
Tailor-Made, Haute Couture
Our reds are made from Cabernet Sauvignon and Syrah grapes, mostly from old vines (25 years) and very old vines (over 40 years) on small parcels of land with limited production.
The grapes are hand-picked and sorted with the utmost care.
The tanks are filled by the simple force of gravity because the reception area for the harvest is on an upper level and the fermentation area is semi-underground. The vinification method is adjusted according to the personality of the wine we are producing.
Red wines of Provence
Papillon des Launes
We work at low temperatures (20 to 25° C) and prefer to extract during the "watery phase”. After a very short maceration period, we draw out the “watery part” before fermentation has finished and mature the wine through reduction to conserve the aromas. The maturation period is short and takes place entirely in tanks.
Château des Launes
We work at high temperatures with grapes selected in the vineyard. Very ripe, the phenolic components of the grapes are at their optimum thanks to leaf-plucking at the end of the season, just before the harvest. Extraction is guided by daily tastings and maceration takes place in the traditional way at high temperatures (30 to 35°C).
The extraction process is helped by overflow removal and reassembly. Malolactic fermentation and maturation takes place in barrels. The woody notes are selected and controlled through comparative tastings. The length of the maturation period is variable according to the characteristics of the vintage, but it is generally between 12 and 18 months. For our very finest grape selections, we carry out fermentations in small wooden barrels without using any mechanical operations.
This wine is entirely hand-made: hand-picked, destalked, and lightly pressed underfoot. It is produced in a specially adapted 900 litre barrel and worked without using a pump (manual rotation in the tank or manual reassembly). Traditional methods allow us to treat our grapes with the utmost respect right up to the end of maturation.
These “tailor-made”, “haute-couture” wines are the most natural expression possible of the “terroir” on which they were born.
