Vinification of rosé wines
Rosé
Entirely hand-picked, our grapes are selected and sorted on the vine and in the cellar. The harvest arrives in a reception area equipped with a vibrating sorting table. The crates of grapes are poured on slowly – around 20 kilos at a time to avoid squashing the grapes. Then gravity helps them fall into our pneumatic, closed cage wine-presses.
The separation of the mire is adjusted according to the aromatic quality of the juice. We control the level of turbidity by tasting the light mire. The entire fermentation process takes place in thermo-regulated tanks at temperatures that allow us to control the speed and quality of the process.
Maturation is short and at low temperatures to help conserve the freshness of the aromas.
The final mix takes place in December and defines the personality of our wines: light, fresh, airy and elegant for “Château des Launes” and festive, fruity, joyful and seductive for « Papillon ».
The pressing method is adjusted according to grape variety: Cinsault and Grenache are treated differently; avoiding all contact with the air to minimise trituration and preserve the aromas. The result… discreet and delicate coloured rosés.
