Emotion filled with light
Patiently matured over 12 months in new French oak barrels, this beautiful, clear red has a deep ruby colour and develops a nose of intense character.
- Silver Medal: Concours des Vinalies Internationales 2011
- Terroir: Clay and sandstone with gneiss and schist.
- Grape variety: Syrah (85 %) – Cabernet Sauvignon (15 %).
- Production : 35 hl / ha.
- Harvest: Hand-picked in 30kg crates. Selected and sorted on the vine and in the cellar on a vibrating sorting table.
- Vinification: Destalking – reassembled twice a day. Fermentation at controlled temperatures (between 28 and 30°C) and under grape skins after 3 weeks of alcoholic fermentation. Gentle pressing in pneumatic wine-presses followed by malolactic fermentation.
- Characteristics: Deep carmine colour with blue shimmer. Complex and powerful nose : baked cherries with liquorice, black olives and leather notes. Full and rich in the mouth, not very acid. The structure evolves in the glass and offers a long mouth to finish with a touch of fruit and liquorice.
- Aging potential: A wine which will age perfectly over 5 to 10 years.
- Accompaniments : Cheese platter (goat cheese, Beaufort, Aubrac, Cantal), red fruit crumble.
