White wine of Provence

  • Bronze Medal: Concours de la Foire de Brignoles 2011.
  • Terroir: Light in structure : a silt soil composed of gneiss and schist mixed with bits of clay on a fractured base of sandstone.
  • Grape variety: Old vines - 80% Rolle and 20% Ugni Blanc. The optimal maturity of the vines allows a production of small quantities full of expression.
  • Production: 22 hl / ha.
  • Harvest: Hand-picked. Selected on the vine and in the cellar on a vibrating sorting table.
  • Vinification: Short maceration of skins, dynamic draining with very little pressure and gentle pressing in pneumatic wine-presses. Fermentation at low temperatures ( 15-16°C) to conserve all the aromas. Matured on fine lees, light assembly then clarification by natural sedimentation.
  • Characteristics: Straw yellow in colour with a green shimmer. Complex nose blending tropical fruit, acid notes and a vegetal aroma. The power of the Rolle (Vermentino)grapes blends well with the freshness of Ugni Blanc to create a wine that is both rich and long in the mouth. Lots of expression for a wine that will blossom over the coming months to reveal all its aromatic complexity.
  • Aging Potential: A wine to enjoy today and for two years.
  • Accompaniments : Ideal as an aperitif, with salmon and dill, red mullet with parme ham or fennel.

The power of the Rolle marries the freshness of the white Ugni on the palette to create a nectar with a rich and long mouth. This wonderfully expressive wine is a natural compliment for seafood dishes, scallop kebas and salmon with dill.

  • Vinification: Short maceration of skins, dynamic draining with very little pressure and gentle pressing in pneumatic wine-presses. Fermentation at low temperatures (15 – 16° C).to conserve all the aromas. Matured on fine lees with “batonnage”. Light assembly then clarification by natural sedimentation.
  • Characteristics: A very light, clear yellow colour and a very expressive and complex nose blending floral notes (white flowers like acacia…) with a framework of white fruit (pear, peach) and exotic fruit (pineapple..). The power of the Rolle (Vermentino) marries the freshness of white Ugni on the palette to create a wine that is both rich and long in the mouth. Lots of expression for a wine that will blossom over the coming months to reveal all its aromatic complexity.
