Special vintage red 2008

Observe its magnificent ruby colour…the elegant architecture of this wine consists of ripe red fruit (cherries, strawberries) and a delicate note of leather which wonderfully marries its rounded, silky tannins.

Special vintage red Provence

  • Terroir: Clay and sandstone with gneiss and schist.
  • Grape variety: Syrah (85%)- Cabernet Sauvignon (15%).
  • Production: 35 hl / ha.
  • Harvest: Hand-picked in 30 kg crates. Selected and sorted on the vine and in the cellar on a vibrating sorting table.
  • Vinification: Destalking . Fermentation at controlled temperatures (between 28 and 30°C). Combining pumping over and rack-and-return. Fermentation under grape skins after 3 weeks of alcoholic fermentation. Gentle pressing in pneumatic wine-presses followed by malolactic fermentation.
  • Characteristics: Dark red colour with blue shimmer. A powerful nose with ripe black fruit (blackberries, blueberries), tobacco and cacao offers a beautiful aromatic complexity. The palate is rich and gourmand. The powerful structure gives an excellent aging potential. Beautiful, long finish.
  • Aging Potential: A wine which will age perfectly over 5 to 10 years.
  • Accompaniments: Lamb with honey and rosemary, braised meat with macaronade, dark chocolate fondant.
